Yellow Summer Squash

Summer has officially started at Sunny Meadow Farm! Come get the first of the season fresh from the field summer squash.

Yellow squash belongs to the Cucurbitaceae family, which also includes other types of squash , cucumbers, and melons.

Yellow squash is rich in nutrients such as vitamin C, vitamin A, potassium, and dietary fiber.

It is believed that yellow squash originated in the Americas and was cultivated by Native American tribes long before the arrival of Europeans.

Try it simply boiled until soft, drain well and top with a pat of butter.

How about an Asian stir fry? Toss julienned sticks of squash in a hot pan with sesame oil, ginger and garlic. Cook until crisp tender and add a splash of soy sauce.

Halve a squash, hollow out the seeds, fill with a mix of cooked quinoa and veggies, top with shredded mozzarella and bake until squash is tender for a plant forward entree.
